TUNA

Brine
250 gr    sugar

250 gr    salt

zest of 1 lemon 

Method

  1. Mix all ingredients for the brine and rub it on the tuna. 
  2. Let sit for 20 minutes and rinse with water.
  3. Pat the tuna dry and cut into small cubes.

DRESSINGS

Sesame dressing
50 gr     lime juice

200 gr   oyster sauce

20 gr     honey

100 gr   sesame oil

Wasabi Mayonnaise

100 gr     mayonnaise

  25 gr      wasabi

PLATING
4 little gem lettuce leaves

Furikake

Coriander leaves
slice of lime

  1. Mix the tuna with the sesame dressing and add the furikake.
  2. Put one spoon of the dressed tuna in each leaf.
  3. Add a little wasabi mayonnaise on top. 
  4. Decorate with coriander and a slice of lime.
